close but no cigar:
on sunday i made a pork recipe that was supposed to taste like cafe rio's pork.
not quite. however, the recipe did create a really tender pork roast, so i thought it was worth sharing:
2 1/2 lbs pork
1/3 cup water
1/8 tsp garlic salt
1/8 tsp salt
1/8 tsp pepper
1/2 cup green chili sauce
1/2 cup brown sugar
put pork, water, garlic salt, salt & pepper in crock pot.
cover and cook on high for 4 hours.
drain, shred pork, stir in chili sauce and brown sugar.
i added a little more salt, pepper, and garlic salt to the final product.
it was good, but not cafe rio good.

Okay here is my recipe and I loved it it was delicious. I've never been to Cafe Rio but this was great.

1lb pork loin
1 can tomato sauce
1 can green chilis
1/2 c brown sugar

Combine all ingredient in crockpot and cook 8hrs or until pork pulls apart easily.

Here is the best part the sauce

1 buttermilk ranch dressing packet
1c buttermilk
1c mayo
2 tomatillos (green tomato things)
1/2 bunch cilantro
1 clove garlic
Juice of one Lime
A few drops of green tabasco sauce

Use blender to blend ingredients well. Refrigerate 1 to 2 hours

Serve in tortillas with cheese, cilantro, lettuce, tomatoes, avocado, pico de gallo, etc. But don't forget the tomatillo dressing.

that sounds a lot more like it!!! Cafe Rio's meat is red, and the recipe i made had no color. The recipe for the dressing i had was terrible, it was the same but left out the buttermilk and mayo so it was really concentrated and was neon green. I will have to try this for sure!!! thanks!
